Asian Chicken Salad

Asian Chicken Salad **This recipe was featured as part of our 2022 New Release Wine & Food Pairings.** INGREDIENTS 1 pound of ground chicken 2 tablespoon vegetable oil 2 shallots, thinly sliced 2 garlic cloves, minced 4 tablespoons lime juice 2 tablespoons fish sauce 4 teaspoons Sriracha chili sauce ¼ cup fresh cilantro 1 teaspoon ginger 2 carrots diced 2 red bell peppers diced 5 lettuce leaves DIRECTIONS In a large skillet, heat the oil and cook the garlic and shallots for 2 minutes. Add the chicken over medium heat until no longer pink, 8-10 minutes, breaking it into crumbles. Add all the other ingredients. Cook and stir until drained. Add cilantro. Serve

Melon and Prosciutto Skewers **This recipe was featured as part of our 2022 New Release Wine & Food Pairings.** INGREDIENTS ¼ ripped Cantaloupe 8 oz of sliced prosciutto 1 ripe avocado 1 watermelon radish 15 skewers DIRECTIONS Cut the slices of the prosciutto in half and fold in a square. Using a melon baller scoop, make 15 balls out of the cantaloupe. Slice radish very thin. Cut 15 squares of avocado. Assemble skewers adding the radish first followed by cantaloupe, prosciutto and avocado. Servings: 15 skewers

The earthy goat cheese and thyme are balanced by the fresh lemon zest. Ingredients 4 oz goat cheese 4 oz cream cheese 1/4 teaspoon lemon zest 1/4 teaspoon fresh thyme, chopped  Directions In a food processor or mixer, blend the goat and cream cheeses together. Stir in the lemon zest and thyme. Chill overnight to allow the flavors to meld. Serve at room temperature for maximum flavor.
