Mini Lime Cupcake
**This recipe was featured as part of our 2022 New Release Wine & Food Pairings.**
INGREDIENTS
- 2 cups of flour
- 4 eggs
- ¼ teaspoon of cream of tartar
- 7 oz of lime juice
- 1 ¼ cups of sugar
- 16 tablespoons of butter room temperature
- 1 teaspoon of baking power
- Zest of 1 lime
- Powder sugar
DIRECTIONS
- Preheat the oven to 350F.
- Line a mini cupcake pan with mini cupcake liners.
- Separate the egg white from the yolk and beat the egg white until fluffy. Set aside.
- Whisk flour and baking powder. Set flour mix aside.
- With an electric mixer, beat butter and sugar until thick and fluffy.
- Add to the mixer egg yolks, lime juice and lime zest until combined.
- Add the egg white slowly until combined.
- Bake for 10 to 15 minutes or until golden on the top.
- Allow to cool and sprinkle powder sugar on top.
Serves: 48 mini cupcakes
