Asian Chicken Salad

INGREDIENTS
- 1 pound of ground chicken
- 2 tablespoon vegetable oil
- 2 shallots, thinly sliced
- 2 garlic cloves, minced
- 4 tablespoons lime juice
- 2 tablespoons fish sauce
- 4 teaspoons Sriracha chili sauce
- ¼ cup fresh cilantro
- 1 teaspoon ginger
- 2 carrots diced
- 2 red bell peppers diced
- 5 lettuce leaves
DIRECTIONS
- In a large skillet, heat the oil and cook the garlic and shallots for 2 minutes.
- Add the chicken over medium heat until no longer pink, 8-10 minutes, breaking it into crumbles.
- Add all the other ingredients. Cook and stir until drained.
- Add cilantro.
- Serve at room temperature in bed of lettuce.
