Cucumber Salad with Sesame Ginger Vinaigrette

INGREDIENTS

  • 1 cups English cucumbers, chopped
  • 1 cup diakon radish, chopped
  • 1/2 cup carrots, shredded
  • 2 tbsp rice vinegar
  • 4 tbsp sesame oil
  • 1/4 cup green onions, sliced on bias
  • 1 tbsp fresh ginger, grated
  • 1 tsp sugar
  • 1/2 tsp kosher salt

DIRECTIONS

  1. Whisk together rice vinegar, sesame oil, grated ginger, sugar and salt in a medium bowl.
