Grilled Chicken Leg Quarters with Rhubarb BBQ Sauce

INGREDIENTS

  • 4 chicken leg quarters
  • BBQ Spice Blend
  • Rhubarb BBQ Sauce (link to recipe below)

DIRECTIONS

  1. Rub chicken with BBQ spice blend and refrigerate for at least 4 hours, overnight is best.
  2. Light one chimney full of charcoal.
  3. When all charcoal is lit and covered with gray ash, pour out and spread coals evenly over half of the coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes.
  4. Clean and oil grilling grate. If using a gas grill, preheat half the grill to high.
  5. Place chicken quarters, skin side up, over direct heat on the hot side of the grill. Place over on and cook until the skin is starting to brown, about 10-15 minutes.
  6. Flip chicken, now skin side down, and place over the hot side of the grill.
  7. Paint BBQ Sauce on the top of chicken (non-skin side). Place cover on and let cook for 5-7 minutes or until chicken is ~15 degrees from desired target finished temperature.
  8. Remove cover, flip chicken and paint BBQ sauce on skin side.
  9. Uncovered, continue painting and flipping chicken every 2-3 minutes until the internal temperate reaches 180F.
  10. Remove from grill, tent with foil, and let rest for 10 minutes before serving.
