Suggested Wines

  • True Chardonnay (Dry White)
  • Edelzwicker (Off-Dry White)

This is a great recipe when you have left over ham. If you are looking to make it healthier, turkey ham is a great substitute. This soup pairs wonderfully with crisp white wines.

Ingredients

  • 1 tablespoon olive oil
  • 3/4 cup sliced carrots
  • 3/4 cup sliced celery
  • 1.5 cups chopped onion
  • 1 cup chopped cooked ham (Nueske’s is the best!)
  • 1 can Cannelli beans or other white bean**
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon dried savory
  • 1 bay leaf
  • 1/4 cup chicken broth
  • 1/2 cup dry, fruity white wine, such as Edelzwicker
  • Salt and pepper to taste

Directions

  1. Heat oil in a large pan. Add carrots, celery, and onion. Sautee until veggies are softened, about 8-10 minutes
  2. Add ham, thyme, bay leaf, savory, broth and wine. Bring to boil.
  3. Simmer at least 15 minutes
  4. Add salt and pepper
  5. Remove bay leaf
  6. Blend until smooth

Tip: if you are making this soup ahead, you can stop after step 3 and begin at step 4 when you are ready to use.

**Note: Add an extra can of beans if you want to stretch and not sacrifice heartiness.**
