Dry Rieslings definitely improve with time and should not be consumed during the first year after their vintage. They “peak” at 2-3 years and begin a gradual decline after they are 4+ years old.

The crisp acidity of this grape variety begins to dissipate in both styles in about the fourth or fifth year of aging. The dry style becomes soft and well balanced, and the semi-dry version becomes somewhat “flabby”.

The citrus character, which is very prominent in a younger version of the dry style, disappears by the fifth year, leaving a fruit character that is predominantly that of ripe apples.

The impact of the vintage is expressed uniformly across both styles.

We were pleasantly surprised at what we found in our Pinot Noir collection:

The optimum age for consumption is 4-5 years post-vintage.
The tannins soften dramatically with the passing of time.
The vintage has an enormous influence on the fruit character and intensity, more so than in a white wine.
