Dry Rieslings definitely improve with time and should not be consumed during the first year after their vintage. They “peak” at 2-3 years and begin a gradual decline after they are 4+ years old. The crisp acidity of this grape variety begins to dissipate in both styles in about the fourth or fifth year of aging. The dry style becomes soft and well balanced, and the semi-dry version becomes somewhat “flabby”. The citrus character, which is very prominent in a younger version of the dry style, disappears by the fifth year, leaving a fruit character that is predominantly that of ripe apples. The impact of the vintage is expressed uniformly across both styles. We were pleasantly surprised at what we found in our Pinot Noir collection:
